  2. My favorite protein is beans & rice.

    I fix them all different ways with different spices and my husband and I never get sick of eating them.

    With different spices you can totally change the taste.

    For Indian, I make lentils, tomatoes, garam masala.

    For Tex-Mex, I use black beans, corn, tomatoes, onions, chiles, chili powder.

    For Cajun/Creole I use kidney beans, ro-tel, okra, cajun seasoning.

    For Italian I use kidney beans, frozen Italian veggies, pasta sauce, and Italian seasoning.

    For American (think bar-b-q) I use barbecue sauce, brown sugar, sauteed onions, mushrooms, and green peppers.

    Basically I just take some sort of bean, add some sort of tomato, some other veggie(s), and some seasoning.  I usually use canned beans because I usually want to eat them sooner rather than later, but if I think ahead I'm able to save a ton of money by using dried beans instead!  I'm all about experimenting.  It never comes out the same twice, but I've never had it turn out bad!

  4. Roasted Chickpeas:

    Drain 1 can of Chickpeas (Garbanzo beans).  In a glass oven-proof dish toss them with olive oil and salt.  Put in a 400 degree oven until they are browned and toasty...this is around 30 minutes I'm guessing.  I take them out once and give them a stir.

    I'm telling you.....yummy yummy!

  6. Protein is in everything pretty much.  We really don't have to look for it.  If you getting enough calories, you are getting enough protein.

  7. * Try whole grain pasta tossed with peas, almonds, and your favourite sauce.

        * Whole wheat toast with peanut butter.

        * Bean soup with whole grain crackers.

        * Corn tortillas with refried beans and rice.

    Cook up some tempeh or tofu and mix in with some beans and rice or quinoa. Make peanut butter smoothies. Have a TVP crumble burger or chili. Make/eat lentil soup.

    Tofu, lentils, nuts, beans, peanut butter, soy milk, quinoa, couscous, seitan, tvp, tempeh, vegetables, seeds, are all great sources of protein look for recipes with those.

  10. I usually make sure I eat about a cup of legumes or a cup of tofu eat day.

    Or less then that, but eat penut butter on bread, or walnuts. I love baking nuts into vegan muffins.
