  1. Probably not, check for a best by (not buy) date, and do a taste test.

  2. Unused rolled fondant, whether it has been colored or not, will keep up to 2 months in an airtight container. It should not be refrigerated or frozen. If you find the fondant has dried a bit while being stored, knead in a small amount of vegetable shortening.

  3. If it was stored in a sealed container than it is probably all right, although you should certainly both smell it and taste a little bit in order to make certain that the flavor is right and that it didn’t absorb any odors.   You also want to make certain that it didn’t discolor any, especially if you added some type of coloring or dye before placing it in storage.

If it wasn’t stored in a sealed container, than it likely isn’t at its best quality and should be replaced with newer fondant.  It could have dried out and formed a crust, which might be difficult to get rid of completely.  It also has probably absorbed some odors from the other items that were in the refrigerator with it.
