I only bottled about a week ago so i'm hoping that it will mellow with age?

  1. With some of my brews, I've noticed that the yeast taste has mellowed with time. This happens because the yeast is still alive in your beer. After a couple weeks, the yeast will eat all the food and the pressure in the bottle will become higher, and both will cause the yeast to die. This will lead to a less notable yeast flavor.

Give it another couple weeks. All should be well.

  2. You shouldn't have even sampled your beer that soon. It takes a week and a half to two weeks to carbonate properly. I trust that you left the last ounce in the bottle, not in your glass. You do not want to drink the settled-out yeast.
