I would recommend taking Travelers checks (available from your bank.) This is guaranteed in case the money is stolen, and sadly pick pocketing is very prominent in these areas.  I would recommend 400 dollars in Travelers checks, and 100 in small bills for tips.

Travellers checks are a REAL pain to cash.  There  are ATMs all over and you get the best exchange rate from them.

When I travel, I take enough cash for two or three  days on the town and find out how plentiful ATMs are.  The hotel front desk can tell you - it's best to find this out before you leave the US.  Then, I charge everything I can to conserve my cash and limit my ATM visits.

I have not been to Cozumel, but I have been to Cancun and Merida.  ATM machines were adequate in the tourist areas, and merchants often take American Express and other cards.  When I was in Merida, however, my room service tab had to be paid in cash at checkout.  Make sure there are no peculiar requirements that might make you late for your departing flight.  Safe journeys.
