My husband and I are interested in starting a mushroom farm in Hawaii? Anybody have any info pertaining to it?

We are looking at the big island or Maui. Also wondering how much space is needed to grow commercially? and do you absolutely need high end sterilizing equipment? Looking for someone is knowledgeable in gormet mushrooms not psychedelic ones.
