According to Spanish law, an EU citizen can only replace his nationality with Spanish nationality. So apparently your husband cannot have Spanish & UK passport together.

You however are in a different position. If u live in UK for 5 years u are entitled to have a UK passport. So when u start to live in UK, make sure you register with homeoffice (BIA) & get a residence card & after 5 years u can apply for UK passport & can have both UK & Spanish Passport.
