  1. It really doesn't sound very cost effective. I'm a fan of fresh ingredients and simple methods, but it would be far too expensive to buy all this land, hire all these people to work there, put in hours and hours of work,  and then supply just one restaurant (or even 1 restaurant chain). It would drive the prices through the roof.

That said, it is possible and not uncommon for restaurants to have inhouse butchers, a bakery, and skilled pastry chefs. Some go as far as sourcing their herbs, fruits and vegetables locally (occasionally on land owned by the restaurant), which is also great, but a start-to-finish operation is sadly out of the question for most restaurants. I think the best thing a chef and owner can do is to check up on their sources regularly and buy local whenever possible.

  2. I think you are a bright individual and hope you never stop thinking outside the box! That said, I agree with the other poster that the beef inspectors and such would be so expensive, and I believe that you would need to start with a regular restaurant, then use the profits to slowly build up your empire.  Yes a lot of restaurants use locally grown foods, and a lot even have their own gardens! The customers love knowing that the herbs and veggies are grown right there. Some city restaurants have their gardens on the roofs if there is no ground lots to grow in.  So thats my 2 cents, start small, start with a garden and work your way from there.  Good luck! :)
