  1. Sensor has gone bad or is dirty.   Remove sensor try cleaning it.. the sensor might be on the radiator.

  2. some times, that sensor gets corroded and can not complete the circuit to turn that light  off. depending on what kind of car and what year you have, you might have to have that sensor replaced, or the whole tank.

  3. Check the float - if it's cracked or saturated it won't rise high enough to turn the light off.  If your radiator is full and your coolant reservoir is full, the problem is the sensor or the float or the wiriing.

  4. Same thing happened to me when I blew a radiator hose on my 95 Grand Am driving down the road.    Stopped filled it and the light stayed on.  Had it towed to a garage for $300 only to find out it was air in the cooling system.

If the level gets too low and the system is filled there's a strong chance that air is trapped in the engine block. NOT GOOD.   But EASY to fix at any garage.   They'll find the air bleed s***w and bleed it while it's running and bleed out the air and all will be good again.

    Good Luck
