    As far as the "once removed" terminology goes, you and your mother's cousin are first cousins, once removed, and your mother and her cousin's son are also first cousins, once removed--the "removed" part indicates that you are of a different generation from one another.  Your mother and her cousin are of the same generation, and you and the cousin's son are of the same generation, so there is no "removed" involved where you and your second cousin are concerned.

    Your children and his children will be third cousins.  His children will be your second cousins, once removed, and they would be your mother's first cousins, twice removed.
