I think you should get her something for her classroom, either a couple great games or books, maybe something for organization.  A nice briefcase or book bag would be nice too if she doesn't already have one.

There's a book that all first year teacher should read before school starts.  The First Days of School by Harry Wong is excellent and I'm sure she would appreciate it.

get her a whole bunch of fun things like hula hoops or baskketballs stuff that deals with the age group shes teaching.
