Question:

My mushroom soup recipe calls for the mushroom stalks?

But the stocks aren't long. Should I use the caps too?

  1. I think who ever wrote your recipe had something else in mind for the mushroom caps like stuffed mushrooms. And they didn't have any thing to use the stems or stalks in so they used them in this recipe.

    There is no law that says you can't use the caps as well in your soup. And you needn't be totally particular about the amount of mushroom bits you use in the soup either. Measures don't have to be totally exact here.


  2. its just the whole mushroom.. caps and stems both.. some people are fussy and only use caps.. they taste exactly the same to me..  

  3. Yes you can use the caps in a mushroom soup. The reason they suggest the stems is for culinary economical purposes. Many professional chefs remove the muschroom stem from the cap for their recipes. This is done for aesthetic appeal. Not to waste them (food costs) the stems are used in stocks, duxelles, and soup.

    One may argue the stem has more flavor but that is not conclusive but subjective.
