What should we (all students) do?

Your description is vague. I'm going to assume you mean she is generally unpleasant?.....

First, find out why she is so harsh. If she is combating a problem in the school, find a way to help her solve it. Show her some support and appreciation. If you have the gall, make an appointment and ask her outright why she seems grouchy. She is a person too. she may have trouble at home, be working late and not getting rest. She might even have trouble with her health. Be polite when you ask, but let her know that the student body thinks she's doing a great job and you want to help. If you don't feel right asking, ask your mother or father to talk to her.

It is worth a try.

Seek first to understand... adults tend to have reasons for interfering. She's playing her own kind of game. If you figure out her game, you can learn to play it better and she'll leave you alone just because as far as she's concerned you aren't breaking any rules.

If she is doing things that are more harsh than seen fit, you could try getting everyone's parent involved and go to the one above her about it...
