Question:

My recipe calls for 2 eggs, but I only have 1?

I'm making pancakes and I want to make the complete recipe, which calls for 2 eggs and I only have 1 egg. Can I substitute the egg with anything so I can still make the pancakes? thanks :)

  3. honestly i would cut the recipie in 1/2 you will have 1/2 the pancakes but they will still taste great.  

  4. The other suggestions are great, but we keep "back-up" on hand for situations like yours.  Living far out in the country, we don't have much choice.

    From now in, try keeping a small carton of "Egg Beaters" or similar scrambled egg product in your freezer.  You just thaw in warm water, measure according to directions, and it works just like regular eggs in most recipes.

    The other thing we do is keep a can of "meringue powder", which is powdered egg white, in our pantry.  You just mix it with water and the amount for 2 egg whites is about the same as 1 regular egg.

    It's not a bad idea to have back-up for milk and other products, too.  We keep both dry milk powder and canned milk in our pantry for times when we need milk for cooking but have run out of fresh milk.

  5. What is a good substitute for eggs?

    2 tbsp corn starch = 1 egg

    2 tbsp arrowroot flour = 1 egg

    2 tbsp potato starch = 1 egg

    1 heaping tbsp soy powder + 2 tbsp water = 1 egg

    1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.

    1 banana = 1 egg in cakes.

    I have used one with good results.
