Question:

My rice in sushi goes soggy?

I've made sushi 4 times and everytime the rice ends up kind of still wet and soggy. I do everything on the packet, use rice vinegar etc and don't stir right through it.

Could someone give me some tips or a new recipe to try?

  1. I dont know, but I think once you put it in the fridge for a while or leave it out for a while, it dries a bit and is much nicer.

  2. Sounds like you are using too much water.  I usually use 2 cups dry rice & 2 and 1/2 cups of water.

    Also, are you cooking with sushi rice?  I like NISHIKI Rice, which is a japanese brand.  It's important to cook with sushi rice as opposed to long grained rice.  

    Don't give up, keep trying.

  3. Use a rice steamer, definitely. When you're drizzling in your rice vinegar seasoning, use a paddle-like spatula to incorporate air. The object is to cool it down quickly. I've even put a tabletop fan near the bowl when I'm mixing.

  4. I always put less water then recommended.

    Then my sister gave me a rice steamer for x-mas....and they are so worth it.  Not that expensive, but amazing, and you can make so many things in it.

    when you have a little spare money or a b-day gift, think about a steamer...if you are making sushi, you probably make enough rice that you would use it often enough.  (with some, you can also reverse and dry out fruit, like strawberries to make stuff like cereal, or even some meats and tofu to make jerky...)

  5. use a rice cooker honestly it was the best investment i made for getting rice perfect it just knows when to turn it off if you are following the right measurments you can get one for like 50 bux or less at any big box store
