If you clarify your question then perhaps I (or someone) can answer it.  I  have been on many NCL cruises and ships and never heard of S T Y L E.

Perhaps you can define what those initials are and/or where you  saw or heard them mentioned regarding NCL.

I think what you are referring to is called Freestyle.  Freestyle means there are no set dinner times.  The ships have many restaurants (usually seven to eleven).  You can eat when and where you want.  Also, dress is casual.  The formal nights are optional.

Traditional cruise lines have set dinner times.  You eat at the same time each night, at the same table each night, with the same table mates.  Typically these cruise lines have two formal nights per week.

There are advantages and disadvantages to each system.  For example, the shows and the rest of the ship's schedule are planned with the standard dinner times in mind.  If you want to see a show, you have to take this into consideration if you are on NCL and plan around the show.  

On NCL it is true you can eat when you want.  However, if you want to eat at the same time as everyone else, you might end up having to wait.  With assigned tables and dining time this does not happen.  

If you are part of a large group that always wants to eat together, you can on either cruise.  However, it is easier with a set dinner time and table.  Everyone knows when and where they need to be for dinner.  With Freestyle dining, it is possible that some will show up at the wrong restaurant at the right time, and some will show up at the correct restaurant at the wrong time.

Obviously the best advantage of Freestyle dining is flexibility and choice.  For a couple or small family group, this can work out really well.
