  1. An easy one is to prove the speed of gravity. You drop a series of bouncy balls from the same height or different height or different objects, measuring the distance and the fall time for each trial. The answer is 9.80m/s^2.

You could do a tough one related to chemistry. Like calculate the # of moles of a substance that are released from a compound when heated. It hurts to think about it, huh?

You could also test the pH of different kinds of water. Pure water is 7, but what is the local tap's pH? Compare to bottled water.

You could also do some research on different kinds of bacteria in.. say milk. Then observe the bacteria in unpasterized milk. Compared to pasterized. What fun!

You could figure out at what altitude your hometown is simply by boiling water & seeing @ what temp. it boils at, using multiple themometers for accuracy. In Wytheville, VA, water boils at 98 degrees C b/c  of the high altitude.

  2. With a video camera and editing software, you can measure the speed of sound. Have a friend set off a firecracker at one end of a large field or stadium while you film it. The difference in time between the flash and the bang, as measure by the number of frames, will give you the speed of sound.

Otherwise, here's an interesting site with thousands of DIY projects that might give you ideas:
