  1. What you have asked is essentially impossible.

    However, since you asked, here goes:

    Cows milk cheese, sheep's milk cheese, goats milk cheese, camel milk cheese, water buffalo milk cheese.  Now you have a general list of all the cheeses in the world.  I'm sure that somewhere in the world there is someone who has created cheese from some mammal that I didn't list.

    Since tofu is made by curdling soy milk, I guess you could call it soy cheese.  There is also head cheese which is made by boiling a pig head until all the soft parts fall off and then congealing the resulting mess into a block.

    Then there is hard cheese, soft cheese and semi-soft cheese.
