  2. By fad I assume you mean fashions that tend to come and go.  How about these:

    Fondue

    Rumake  (bacon wrapped water chestnuts and chicken liver)

    Fruit grilled on the barbecue

    Canapés (open faced sandwiches on a tiny hot dog shaped bun)

    Ostrich meat
