Question:

Name of a bread made in Fez, Morocco, that's really thick, with one side like a honeycomb.?

I remember it as being kind of sweet, and it's made on this huge, huge grill with bumps/holes in it.

  1. kharingal, like crepes or pancakes is the closet thing i can compare it to. one side is flat and smooth the other has tiney or large holes in it. not just fez in oujda they make it. i can make it toooo and its the best lol

  2. It is possibility you are talking about pan de dulce.  This is a sweet bread. The concha variety is what reminded me of what you are talking about but it can come in any forms and is cooked a variety of ways.  

    Pan de dulce is a Judeo-Spanish food that after Inquisition Jewish population took with them all over the world. Morocco had largest historic presence of Spanish Jews.  I grew up with this food even in America, and it is all over the rest of the globe wherever Spanish Jews had presence.  Here are some photos and recipes of it as it is cooked in Mexico as Mexicans have taken this food to become an artwork.

    There are very few Jewish inhabitants in Morocco today most have immigrated back to Israel but there are still some.  It is possible you purchased this bread from one that remains or from a shared recipe as the largest population was in Fez.
