I am a former chef and a blonde roux is used for veloutes either fish or chicken and some game stock based, it is used in sauce were they do not have to be 100% white, not like bechemel.

You can use it for soups with a meat stock base, or mushroom sauces were there is again a meat componant. I use it for sauce with wild mushrooms or soup with a meat addition like chicken, even a game soup with scotch in it.
