Well I'm hoping you mean attacks because sets and passes aren't really hits they're touches.  For hits the basics are pretty much a normal kill attempt, din ks and rolls.  There is a lot of different plays ways you can set the hitter though, if that's what you meant.  Man this question is vague.

The three different hits used to be the bump, set, and spike.   A hit is defined as a ball touch (an attack hit would be a type of hit, and is defined as a hit which causes the ball to cross the plane of the net).    With the new rules instituted in the last few years, the 3 types of hits should be named:

    1) Pass/Dig - can be open handed, a bump with the forearms, a pancake, a shoulder, etc.  Essentially, it is anything that keeps the ball off of the ground after it crosses the plane of the net coming in your direction.

    2) Set - can be a bump set, a two handed push, a touch set, I've even seen someone set the ball with their head.   This hit is characterized by the control of the direction and position of the ball such that it "sets" up the 3rd hit for an attack over the net.

    3)Spike/Attack - can be a power hit, dink, finger tip, shoulder, head, foot, etc that causes the ball to cross the plane of the net.   essentially, it is anyway that you can get the ball over the net without lifting/carrying or double hitting it.
