Need Arroz Con Gandules recipe with beer.?

My friend made it a few wakes ago I am cuban but my hubbys puerto rican I know he used sausage,onions garlic,green bell pepper,and vino seco than he added the beer later anyone know?

I am Puerto Rican, and I have made junto (arroz con gandules) with my abuelita many times.  I cannot give you a recipe as 1) we cooked for over 30 people and 2) none of the Puerto Ricans I know follow a recipe - it's all by look and by taste ... and no 2 cook's dishes will taste the same (not even sisters who all learned from their mama).  

    And we've never added beer ... BUT, if it's added after the rice is added, as a part of the liquids needed to cook the rice, that makes the most sense as the rice will definitely absorb the flavor that way and the alcohol will be cooked off no matter what.

  2. 6 strips bacon

    1 large onion, chopped

    2 aji verdes (Italian frying peppers), diced

    2 cloves garlic, minced

    1 pound sausage, diced

    3 tablespoons tomato paste

    2 (15-ounce) cans pigeon peas

    2 cups dry white wine and 4 cups beer

    Salt, to taste

    6 cups Canilla rice

    Banana leaves

      

    In a saute pan, cook the bacon, drain the fat and cut into small pieces.

    In the same pan, add onion, aji verdes and garlic. Sauté until golden brown.

    Add the sausage.

    Add tomato paste and caramelize.

    Add pigeon peas and white wine. Season with salt to taste and bring to a boil.

    Add rice and stir once.

    Cook on medium heat until most of the wine is absorbed then add the beer.

    Cover with banana leaves and continue cooking on very low heat until the rest of the liquid is absorbed, about 20 minutes.

  3. When my wife gets home Ill have her answer your question, she is Boricua.  But I just had to add that folks that cut and paste recipes from online sites are just lame.  We have the internet or we would not be posting here.  We can find those same sites.

    And your cut and paste did not answer the question.  It does not use beer any place in your cut and paste post
