Before refrigerator was invented, many foods were preserved by soring them in salt.

Explain why micro-organisms may have a difficult time growing on food preserved this way.

Give two examples of foods that are preserved using salt.

  1. Salt preserves foods by lowering the amount of "free" water

    molecules in foods. Bacteria can't grow where free water

    molecules are barely present.

    Ex. Fish
