  1. get a steak cut into strips

    and a chilli dressing and soy sauce add sliced peppers and other veg

    and cook some fresh egg noodles


  2. You can use regular flour and water.

  3. Cut meat thin and saute a few minutes.  Remove from pan.  Saute veggies of choice, be sure to use garlic as well.  Add meat back to pan after cooking veggies.  Then all I do is add soy sauce, beef stock, chile paste and a little red wine, let simmer.  While it does not make a thick sauce, it is still great.  

  4. You can thicken a sauce(without using cornstarch) using flour and water.  Mix the flour (1/2 cup or so) INTO warm water, then slowly pour it in to simmering sauce stirring constantly.  It will make the sauce lighter, unlike the cornstarch which doesn't effect the color of the sauce.

    CHINESE - STYLE BROCCOLI BEEF DISH

    2 c. dry rice

    3 c. water

    1/8 tsp. salt

    1/2 - 1 head fresh broccoli, chopped into bite size pieces

    1 c. water

    1 1/2 lb. beef (round or chuck, lean, sliced into 1/4 inch bite sized pieces)

    5 tbsp. oyster - flavored sauce

    2 - 3 tbsp. rice wine

    5 - 6 tbsp. vegetable oil

    5 - 6 tbsp. water

    2 - 3 tbsp. finely chopped ginger or 1 tsp. powdered ginger

    Place rice in steamer with water and salt, or place rice in a sauce pan with water and salt to simmer, stirring rice until fluffy. Then remove from heat, cover and set aside. Next, GENTLY steam broccoli about 3 to 5 minutes until slightly crunchy, NOT LIMP (don't over cook broccoli). Cover broccoli, remove from heat and set aside. Then, heat up a wok or place a skillet on medium heat with oil and water then brown beef, stirring occasionally. One at a time, add remaining ingredients while stirring beef - oyster - flavored sauce, rice wine and ginger. Stir beef over heat for about 10 to 15 minutes, then cover, turn off heat, set aside and let set for 1 to 2 minutes. Then spoon out rice onto serving dish. Next place broccoli over bed of rice. Finally, spoon out beef over the broccoli, including beef juices. Serves 4 people.
