Need a good easy idea/recipe for dinner this evening

I need a good easy recipe for dinner tonight. I'll try anything but my favorite foods usually have a bit of a kick to them, you know spicy.

I'm open to any suggestions.

  1. This is REALLY delicious;

    5 teaspoons olive oil

    4 shallots, diced

    1 large onion, cut into thin strips

    1 pound bacon, cut into strips

    1 clove garlic, chopped

    1 (16 ounce) package fettuccini pasta

    3 egg yolks

    1/2 cup heavy cream

    3/4 cup shredded Parmesan cheese

    salt and pepper to taste

    Heat olive oil in a large heavy saucepan over medium heat. Saute shallots until softened. Stir in onion and bacon, and cook until bacon is evenly browned. Stir in garlic when bacon is about half done. Remove from heat.

    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain pasta, then return it to the pot.

    In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon mixture over the pasta, then stir in the cream mixture. Season with salt and pepper. serves 6.

    Mexican Style Shredded Pork

    1 (3 pound) boneless pork loin roast, cut into 2 inch pieces

    1/2 teaspoon salt

    2 (4 ounce) cans diced green chile peppers

    3 cloves garlic, crushed

    1/4 cup chipotle sauce

    3 1/4 cups water, divided

    1 1/2 cups uncooked long grain white rice

    1/4 cup fresh lime juice

    1/4 cup chopped cilantro

    Place the roast in a slow cooker, and season with salt. Place chile peppers and garlic on top of roast. Pour in the chipotle sauce and 1/2 cup water.

    Cover, and cook 7 hours on Low.

    In a pot, bring remaining 2 3/4 cups water and rice to a boil. Mix in the lime juice and cilantro. Reduce heat to low, cover, and simmer 20 minutes.

    Remove roast from the slow cooker, and use two forks to shred. Return pork to the slow cooker, and allow to sit 15 minutes to absorb some of the liquid. Serve over the cooked rice. serves 6.

  2. How about some great-tasting Dijon-maple salmon with pineapple salsa?

    (I usually use honey instead of maple, and you can use mango instead of pineapple in the salsa

    1/3 Cup Maple Syrup

    2 Tablespoons Dijon Mustard

    2 teaspoons minced Garlic

    2 teaspoons grated fresh Ginger or 1 teaspoon dried Ground Ginger

    ½ teaspoon ground Cayenne Pepper, or to taste

    1 Tablespoon Soy Sauce

    4 Salmon fillets*** (6 Ounces each)

    1 Tablespoon Canola Oil

    Pineapple Salsa:

    3 Cups diced fresh or canned Pineapple

    1 Cup halved red seedless Grapes

    ½ Cup finely diced Celery

    1 Jalapeno Pepper, seeded and minced (wear gloves)

    1 Tablespoon Red Wine Vinegar

    1 Tablespoon Fresh Lime Juice

    1 Tablespoon packed Brown Sugar, or to taste

    1 heaping teaspoon Hot Sauce, or to taste

    1/3 Cup minced Cilantro

    1/3 Cup coarsely chopped Red Bell Peppers (seeds removed)

    COMBINE syrup, mustard, garlic, ginger, pepper and soy sauce; whisk well. Place fish in a closeable freezer bag and pour in the marinade. . Refrigerate several hours, or over night to allow flavors to blend, turning bag over occasionally.

    Combine salsa ingredients about an hour before serving and let stand at room temperature; stir well taste and adjust seasonings as needed

    HEAT grill to medium-high heat. Coat the grate (use a fish grate if possible) with non stick cooking spray and place 4-6-inches from the heat. Remove fish from marinade (marinade can be used to baste if desired, then discard) Brush salmon evenly with oil.

    GRILL 4 minutes on each side or until salmon flakes easily with fork, brushing frequently with the syrup mixture. (Fish should be cooked a total of 10-minutes per inch of thickness, adjust time accordingly).... Serve on warm plates with the pineapple salsa...Grilled chile corn a watermelon salad go well with this great dish!


  3. you'll need the juice of half  a lemon

    a half cup of milk

    (mix these two and set aside)

    cut chicken

    flour

    butter and olive oil

    2 tablespoons of hot sauce

    1 can of tomato sauce

    in a heated pan add about a half stick of butter and 4 tablespoons of olive oil.  when heated add chicken you've cut into strips and dredged in flour, when chicken is cooked (remove and keep warm) add one can of tomato sauce, and the milk lemon mixture, simmer and stir very frequently.  add the hot sauce. continue stirring.......add the chicken.

    serve over pasta

  4. Here is one of my easy favorites.  Its a West Indian dish and is super easy and tasty.

    Pelau

    Ingredients:

    2 cups cleaned and washed rice

    1 whole chicken, cut up in bite-size pieces (no skin)

    1 can pigeon peas, drained can be subsituted with your favorite beans also I use kidneybeans in coconut milk often

    2 cups thick coconut milk

    1 teaspoon browning - I never use but you can if you stock it

    1 tablspoon soy sauce

    3 stalks of chive, chopped

    2 cloves of garlic, crushed

    1 stalk thyme, chopped (substitute with dried thyme, if necessary)

    1 tablespoon brown sugar

    2 tablespoons. oil for frying

    Salt and pepper to taste

    1 green hot pepper  we use what pepper we have usualy habenjaro or goat pepper, I've never used a jalapeno though.

    Method:

    Season chicken pieces with salt, pepper, garlic, chive, thyme and marinate over night, or at least for one hour. In iron pot heat up oil, add sugar and brown until the sugar has turned into a rich brown syrup. Add meat to the pot and cook for about 5 mins. until meat is brown on all sides. Add a small portion of water and cook meat for about 20 mins. Add drained can of pigeon peas Add soy sauce and toss up Add cleaned rice and stir well Cover with coconut milk (may have to add some water). Float green hot pepper on top (do not burst pepper ) and simmer on slow fire until rice is cooked (you may have to add a little water from time to time) and stir pelau in between. Water has to evaporate completely, but rice has to be cooked, not hard. note: pelau can be made with beef instead of chicken.




  5. this is my husband's favorite of all my recipes...

    brown some ground beef add cumin, chilli power, sauteed onions, peppers, and garlic.  roll out a pilsbury pizza crust.  put the meat mixture onto the curst right down the center.  cover the meat with some taco cheese and more spices.  roll the crust into a stromboli-ish shape.  sprinkle the top with more spices.  bake for 13 minutes.  serve with sour cream, lettuce, tomato...whatever you like on your tacos.  it is delicious, spicy, and a great crowd pleaser while still quick and easy!!  good luck and happy eating!!!!
