Question:

Need a hummus recipe with out lemon juice?

I can not have lemon juice or anything with acid and I can not seem to find a hummus in stores or a recipe with out lemon juice. Can i just leave it out of the recipes I find or does anyone have a great Non-Lemon juice Hummus recipe?

  1.  I used yoghurt as a substitute for lemon juice.  It gives a tang without being too acidic.  I made a batch for my brother who has a stomach ulcer, which he can eat with cucumber and carrot sticks.  Other stomach friendly changes I made were substituting 1 t of cumin with just 1/8 teaspoon of tumeric (a very mild spice which mainly just adds a hint of colour), and using fine pepper powder rather than using the pepper grinder.  The tahini is essential, and as above I added olive oil and a little liquid from the can as required to get it liquid enough to process.  The result: lovely and creamy, but the fresh garlic clove was still a jarring note.  I would suggest either roasting the garlic clove first, or using garlic powder or subbing garlic salt for the regular salt.
