If you're okay with shoujo (girl) anime, then I would recommend Saiunkoku Monoagatari, Yamato Nadeshiko Shichi Henge (if you read manga, think "The Wallflower", which is an anime), or going into some classics - Fushigi Yuugi, Yami no Matsui.

If you lean more towards the Shounen (boy) anime, then I would try Hellsing (both the TV anime and the new ones they have coming out, "Hellsing Ultimate"), I've heard Basalisk is good, um, Rurouni Kenshin (for an oldie), Samurai Champloo (though I'm not really sure if that is considered shounen or not to be honest), Eyeshield 21 (which is a really good -and hilarious- football anime).

That's about all I can remember off the top of my head. Other than that, best thing to do is to go to, let's say Fanfiction.net, look at the titles of fanfiction they offer, and then look them up on wiki to see what they're about. Odds are you'll find some really good ones that won't be mentioned.
