An affidavit is a sworn statement.  Those who have known you well for at least two full years need to write a statement detailing how they met you, what the relationship is, and all other requested information.  Then they have to swear to its truth and accuracy before a notary public or officer of the court, who will stamp and attest that the person swore to the truth of the statement.

Anything false sworn under oath means jail time for the person who swears it, therefore immigration requires that the statement must be attested under oath.
