Need an aswer FAST. apsaragus recipes??

i have a pound of asparagus tips and pork shoulder roast cooking. i need a quick and tasty way to cook my yummy asparagus =]

  1. I would just saute them in olive oil, fresh minced garlic and parm cheese.  Add fresh lemon juice if you have it.  Cooks in 2-3 min.


  2. I steam mine in a microwave steamer for about 7 minutes on power 5.  I put some butter and a little salt on it.  

  3. I season mine with a little salt and pepper,fresh garlic and lemon juice then steam it. Simple and quick but yummy!

  4. Marinate in Italian dressing and grill for about 8 minutes on each side, or untili tender. So delicious!

  5. Steam and then cover with a 30/70 lemon juice and butter mixture and then top with grated parmasean cheese.

  7. Asparagus Casserole

    4 cups cut asparagus (or 2 8oz. frzn pkgs)

    ½ cup sour cream

    1 Tbsp onion, grated

    ½ cup stuffing mix

    1 can cream of shrimp soup

    2 Tbsp carrots, shredded

    1/8 tsp pepper

    1 tsp butter

    Cook and drain asparagus. Combine remaining ingredients except butter; pour into 1qt casserole dish. Melt butter and pour over top. Bake at 350 degrees for 30-35 minutes.

    Asparagus Risotto

    1 quart chicken broth

    1 lb. asparagus

    3 Tbsp. butter, divided

    1 med. onion, chopped

    1½ cups Arborio rice

    1½ cups dry white wine

    Zest of one lemon

    ¼ cup grated parmesan cheese

    Bring broth to a simmer in a medium saucepan.  Trim ends of asparagus, and cut into 1½” pieces.  Toss asparagus into simmering chicken stock for about 3 minutes.  Remove asparagus to a bowl; reduce heat under broth to med-low.

    In another large saucepan, melt 2 Tbsp. butter.  Cook onion in butter until soft.  Add rice and stir to coat with butter, about 2 minutes, until fragrant and slightly translucent.

    Add wine to rice, and cook until almost all liquid is evaporated.  Add a small ladle (about ½ cup) of warm broth to rice, stirring until broth is absorbed.  Continue adding broth and stirring until it’s absorbed until a creamy sauce is formed in rice.  This should take about 20 minutes and you should have about 1 cup of broth left over.  Add remaining broth, 1/3 cup at a time, until absorbed.  

    Taste rice.  If almost done, stir in remaining 1 Tbsp. butter and lemon zest.  (if not, add 1/3 to ½ cup water and continue stirring and cooking, about 3 minutes.  Add parmesan cheese and asparagus, heat 1-2 minutes.  Add a couple Tbsp. water if risotto is too thick.  Serve w/ additional parmesan cheese.

    Makes 4 servings.

    SAFFRON ORZO WITH ASPARAGUS AND PROSCIUTO

    Yield: 6 servings

    4 Tablespoons butter (1 /2 stick)

    2 oz thinly sliced prosciuto, cut into thin strips

    1¼ Cups Orzo (about 8 ounces)

    3 Cups low-salt chicken broth

    ½ teaspoon (loosely packed) saffron threads, crushed

    1 pound slender asparagus, trimmed, cut into 1 /2" pieces

    ¼ Cup grated Parmesan Cheese

    Parmesan Cheese Shavings, Optional

    1. Melt 2 Tablespoons butter in a large, non-stick skillet over medium-high heat. Add prosciuto and saute until almost crisp, about 3 minutes. Using a slotted spoon, transfer to paper towels to drain.

    2. Melt 2 Tablespoons in the same skillet over high heat. Add Orzo; stir 1 minute. Add broth and saffron; bring to a boil. Reduce heat to medium-low, cover, and simmer until orzo begins to soften, stirring occasionally, about 8 minutes. Add asparagus; cover and simmer until tender, about 5 minutes. Uncover and simmer until almost all of the liquid is absorbed, about 1 minute. Remove from heat.

    3. Mix in prosciuto and 1 /4 cup of the grated cheese. Season to taste with salt and pepper. Transfer to a large bowl. Garnish with the Parmesan shavings.

    Pan Fried Asparagus

    (for all you garlic and asparagus lovers!)

    1/4 cup butter

    2 tbsp olive oil

    1 tsp coarse salt

    1/4 tsp ground black pepper

    3 cloves garlic, minced (I added more)

    1/2 pound fresh asparagus spears, trimmed

    Melt butter in skillet over med-hi heat. Stir in olive oil, salt and pepper. Cook garlic in butter for a minute but do not brown. Add asparagus and cook for 10 minutes, turning asparagus to ensure even cooking.

  8. I saw this on Rachel Ray and I use it for a lot of my veggies...

    Trim the asparagus, then saute it in a bit of good olive oil until slightly browned and wilted.  Splash some soy sauce or Worchester sauce on it and finish with roasted sesame seeds... yummmmy.

  9. Well, it's not quick, but it's yummy.

    If you have the pork in the oven.....

    Place asparagus on a cookie sheet with sides, jelly roll type.  Drizzle olive oil, butter or regular oil over asparagus.  Shake garlic powder over.  Roast (bake with pork) for about 20 min.

  10. I grill mine using a grill pan.  Spray with cooking oil, grill about 5 - 7 minutes, I like mine crisp.  Season with salt, pepper and fresh squeezed lemon over the top.  It is perfect and healthy.  If you want you can also drizzle with melted butter.
