I have several packages of boneless skinless chicken thighs. The other day I fixed some, just seasoned and grilled. My wife and I ate them, but they weren't that great. Any other ideas? Keep it simple please, nothing exotic. Shes a real picky eater.

  1. shish kabobs are great!

cut chicken pieces into chunks and marinade in italian dressing or any other marinade

then put on a wooden skewer with large chunks of green pepper, red pepper, onion, mushrooms, cherry tomatoes- whatever veggies you'd like really- just make sure to alternate the chicken and different veggies for a nice look and don't squeeze everything on too tight-you want everything to get cooked evenly. and season with seasonings also

then just place on the grill and make sure to baste with more marinade while cooking on the grill to keep everything juicy!

  2. cook some plain white rice, grease a like 9x13 baking pan and spread it evenly then place whatever chicken you have on top and pour about 2 cans of cream of mushroom or chicken soup on top and season with salt pepper and garlic salt cover and bake until the chicken is cooked, uncover and sprinkle your favorite cheese on top and put back in until melted

    or chicken spaghetti

take the chicken and boil it with salt and pepper and garlic in the water, drain it and shred the chicken, boil some spaghetti noodles until they're done, drain and put back into a large pot add the chicken, a can of rotel (depending on how much you want in there) and add a can of queso, or cheese whiz whichever you want and season it with whatever you like, cover and wait for cheese to melt and mix thoroughly,

or betty crocker has those great complete meals in a box they have a great selection and they're really good too.

  3. get 2 cans of cream of mushroom soup,,,, 10 mushrooms cut up

cook chicken in the mushroom soup

    add some salt and pepper

a tablespoon of tabasco sauce THis is just for flavoring

cook about 20 minutes it is when the mushroom are soft

1 16 oz sour cream 15 minutes before serving

then serve over rice or pasta

  7. it depends on the seasonings you have..

you can season them with garlic salt and black pepper, fry them in about 2 tbls of oil with out batter when they brown and add 1 onion diced or sliced and mix with the chicken, cook for about 5 mins and then add about 3 -5 diced roma tomatoes and cook on med heat for about 15 mins add water if needed and then cook for another.15-20mins check on it to see how it looks. taste it and it needed add addn'l salt and pepper to your taste

I have cooked this before and my friends loved it..i had some hot pepper to make it a little spicy..

*important make sure that the chicken does not touch when you fry them that will cause all of the water to come out and the chicken will not brown. the pieces will shrink as they cook.

  8. EASY CHICKEN MARSALA

    4 boneless skinless chicken b*****s

    1 stick butter

    1 cup flour

    1 tsp salt

    1/2 tsp pepper

    1 cup milk

    3/4 cup marsala wine

    1 cup sliced mushrooms

In large saute or fry pan, melt butter. While butter is melting, combine flour, salt and pepper in small bowl. Dip each piece of chicken in milk; shake off excess. Dredge chicken in flour mixture and add to fry pan. (I like to cut chicken b*****s in half before coating.)

Saute chicken in butter over medium to medium-high heat until browned and cooked through, turning often. Add more butter as needed. (Be careful turning chicken so as not to break off any of the flour coating.)

Remove chicken from pan and place on platter. Keep chicken warm while making the sauce.

Turn heat to medium high and add the mushrooms; saute until cooked. With mushrooms still in the pan, deglaze with the wine, stirring to get all of the brown bits off the bottom of the pan. Turn heat to medium low and continue to cook sauce, stirring frequently, until sauce has thickened slightly.

(Note: Sauce should be tasted frequently, and more wine or butter can be added as necessary. If sauce does not thicken properly, add a little bit of flour and continue to stir.)

When sauce is ready, add chicken back to the pan and turn to coat.

Remove chicken to serving platter and top with remaining sauce. Decorate with parsley sprigs.

  9. OVEN FRIED CHICKEN

    8 boneless skinless thighs

    2 tbs paprika

    2 cups flour

    2 tsp salt

    1/4 tsp garlic powder

    1/4 cup butter or marg.

Combine all ingredients except chicken and butter. Put butter in 9x13 inch oven baking dish and melt.

Coat chicken with dry mixture and place in pan with melted butter.

Cook at 425 for 20 min. Remove from oven and turn chicken over.

Cook for an additional 20 min at 425

This is sooo good! We eat it all the time. We use all kinds of chicken for it too. It works well with all chicken.

    Enjoy!
