  1. yes, there's a missing step here:

after you mix the hot rice with the seasoned rice vinegar, you will want to fan it to cool it quickly as you toss it.

this step gives sushi rice its characteristic glossy sheen.

  2. Every time ive made sushi with my husband weve never even used rice vinegar and it turns out great!  But if you have to use it just follow the directions on the back of the rice bottle. Mine says after cooking rice remove pan from heat and stand covered 10 min. After the rest period, put rice in nonmetallic bowl. Stir in 2 tbsp seasoned rice wine vinegar. Mix well and continue with your favorite sushi recipe. My husband says he made it with the sugar and salt before and he and another friend didnt like it as much.

  3. 2 cups sushi or short grain rice

2 cups water, plus extra for rinsing rice

    2 tablespoons rice vinegar

    2 tablespoons sugar

    1 tablespoon kosher salt

    perfect sushi rice

  4. Yes you do need to add more, recipes for sushi rice take into consideration the fact that rice vinegar already has salt and sugar as ingredients.
