  1. chocolate chips.  they add a little extra to a plain old cup cake.  you can also add shredded coconut to vanilla icing and put on top or maybe a little cherry juice or cherry pieces for the chocolate cherry experience.


  2. keep it simple and make chocolate cupcakes with chocolate icing...that is a favorite for most.....  

    just follow directions on box and buy ready made icing in a tub....simple but still very good! :)

  3. The boxed mix already has the extra deep chocolate flavor in it.  But if you are looking to intensify it.. add chocolate liqueur in place of the water.

    If you want to making interesting icing flavors to go with the devil's food flavor, then add Grand Marnier or some other fruit flavored liqueurs to the icings instead of vanilla.  That will be a very big hit at the party!

  4. Instead of water, add brewed coffee (cooled down) for a great mocha flavor!  If you don't have that, use water, and add a couple tsp. of instant coffee granules or espresso powder.

  6. Well since your cupcake flavor is chocolate I would make a coffee or mocha flavor frosting.

    Ingredients:

    1 tablespoon coffee powder or instant espresso

    4 teaspoons hot water

    2 cups powdered sugar

    2 tablespoons unsweetened cocoa

    1/2 cup butter, softened



    Directions:

    In large bowl, dissolve coffee powder in the hot water. Add powdered sugar, cocoa, and softened butter; beat with mixer on medium until smooth.


  7. You could make black forest cupcakes and use whipped cream for icing with a spoon of cherry pie filling on top of each cupcake.

Adding coffee brings out the flavor of the chocolate.  Chocolate chips (semisweet) are a big treat in the cake but if you are making cupcakes stir the batter frequently as they sink to the bottom.  Whether you use a box or not, do not forget to add the coffee to the cake batter.  The buttercream frosting is perfect for these cupcakes!  Mocha Frosting is also excellent; that recipe is included, as well.

    Chocolate Mocha Cake

    One pkg Devil’s food cake mix

    1  3.9 oz. pkg instant chocolate pudding

    2  cups sour cream

    1  cup melted butter

    6  eggs

    One double shot espresso (or 2 T. instant coffee or espresso powder)

    2 cups semisweet chocolate chips

    Preheat oven to 350°.  Grease a 9x13 pan.  In a large bowl, stir together cake mix and pudding mix.  Make a well in the center and pour in sour cream, melted butter, eggs and espresso.  Beat on low speed until blended.  Scrape bowl, and beat 4 minutes* on medium speed.  Blend in chocolate chips.  Pour batter into prepared pan.  Bake in preheated oven for 50– 55 minutes. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

    Chocolate Mocha Cupcakes

    If you wish to make cupcakes, this recipe will make about 4 dozen.  Line muffin tin(s) with paper liners. Fill each about 2/3 full.  Bake for 15-20 minutes or until a toothpick inserted in center comes out clean. Cool in pan 10 minutes, then remove.  Cool completely and frost.  

    * When making cupcakes, beat for 2-3 minutes only.  

    Buttercream Frosting

    2 - (1-lb.) pkg. Domino® Confectioners' Sugar

    1 cup butter, softened

    1/4 - 1/3 cup heavy cream or half and half

    1 T. vanilla

    In large bowl using a hand mixer or a Kitchen Aid stand mixer, cream butter. Slowly add powdered sugar and blend well after each addition. Slowly add cream and beat faster until you get a light and fluffy frosting. Add vanilla and beat until blended. Frost cake or cupcakes immediately or refrigerate until ready to use bringing the frosting to room temp.

    MOCHA FROSTING

    3-3/4 cups confectioners' sugar

    1/4 cup baking cocoa

    6 tablespoons strong brewed coffee

    6 tablespoons butter, melted

    1 teaspoon vanilla extract



    Directions:

    In a small bowl, combine all ingredients until well blended.  Frost cupcakes and enjoy!
