  1. I put each item on a note card.  Keep them in categories.

  2. break it down by section. memorize all of the appetizers, then all of the burgers, etc.

also focus on what it is about one item (steak, for example) that's different from another. there may be 8 steaks to choose from on the menu, but maybe half of them are actually the same nine ounce sirloin, just with different "toppers". or maybe they all come with the same sides. rather than try to memorize each separate description of each individual steak, read through and memorize what they have in common. then focus on the names and the differences between them.

the easiest, most efficient way to learn the food is going to be on the job. watch the food that's being served, if you see someone carrying an item you don't recognize, ask them the name of it. quiz yourself constantly. and don't be afraid to ask questions --better to learn now than to not know a few months into the job.

    good luck!

  3. Yes, many times.  Read the menu over and over. Do it also by category, steaks, chicken, seafood, pasta, burgers, sides, appetizers, drinks, desserts.  You can always make a cheat heet inside or on order book.  Take your time, it seems difficult, but you will learn the menu the more you review it. ALso, being there helps, you can actually see filet mignon, seafood marinara, etc....
