Need recipe for Tofu Caprese salad?

I used to have a really good recipe for caprese salad with tofu used in place of mozzerella. I've found a few online but none of them marinate the tofu like the recipe I had. Does anyone know a good recipe like this?

To marinate the tofu, mix 1 cup of vegetable broth and 1 teaspoon minced garlic in a small bowl then pour over slices of tofu.  Marinate tofu in the refrigerator for about an hour.  Serve with the basil, tomato, olive olive, and salt and pepper.
