FOR STEW CHERRIES-Once you have the cherries all you need to do is put it to boil in sufficient water (in relation to how many cherries you have) with spices(not sure of the names - there's one that looks like a piece of wood and the other is called beleaf. You then add brown on white sugar to create the syrup. Let this boil down (simmer) until it gets nice an thick.

    WITH OUT the Syrup - Get a bucket with a tight cover.. wash and clean your cherries. Get red colouring, salt,hot fresh peppers (congo) and some rum.Place the cherries in the bucket of water (with sufficient water to cover the cherries) add your rum(a tad bit), salt to taste, red colouring, a cut up your peppers (depending on how hot you want it). Stir up well. Cover the bucket and leave for about 3-4 weeks. Yes, it seems long but the flavour will sink in nicely.
