Need some classy finger foods, please?

Throwing a bridal shower for my sister next week and we're going to have some finger foods. It's a smaller gathering so nothing too heavy. Also everything will be elegant so I'd like to steer away from things like little smokies and bean dip. :-)

  2. Club Sandwiches

    Take four slices of bread and spread them with butter or margarine.

    On the first slice place ham and some mustard. (Optional)

    Place the second slice of bread on top of Ham, and cover with mashed egg, seasoned with S&P.

    Place the third slice of bread on top of egg, and cover with de seeded tomato pieces, seasoned with S&P

    Top with forth slice of bread, spread side down.

    Cut crusts from the sides and cut into fingers.

    If possible get a loaf of caterers sliced bread.

    It is cut lengthways, instead of across, so you can make several at a time.

    Cocktail Savouries.

    Serve on tooth picks for easy handling.

    (I) A steamed prune stoned, stuffed with cream cheese.

    (ii) Cubed cheese, pineapple and cherry

    (iii) Oysters rolled in bacon and grilled.

    (iv) Sliced pickled onion and cooked sausage.

    Gherkins, Pearl Onions, Stuffed Olives are all alternatives, or make your own combinations.


  3. A really easy classic which involves zero cooking:

    Pick a variety of your favorite cheeses:

    Havarti, Brie, Extra Sharp Cheddar, Smoked Gouda, maybe a Blue Cheese and cut into cubes (I love Trader Joe's for this, if you have one).

    Serve with  w/ nice toothpicks & a variety pack of fancy crackers.

    You could cut cheese ahead of time & refrigerate w/ plastic wrap until people show up.

  9. Hi, I just catered my daughters wedding last saturday. There were around 200 people there. It went great. I am a restaurant manager here in Alaska. Ill give you some ideas. I have catered alot of events. First off I use the internet for good ideas. Google appetizers and there are endless ideas. The ones I will tell you about are proven winners.

                                        Aspaerigus  spears wrapped in puff pastry

    Just drizzle aspearigus with extra virgin light olive oil and season to your taste, I use salt, pepper, granulated garlic, and maybe a little butter.Bake at 350 till pastry is golden brown. This one has to be cooked just befor party starts, has a short shelf life. To get the right length of the spear and to avoid the tuff part just bend and they will break were the will have the best taste, disgard the bottom of the spear.  P.S. my spelling is pretty bad, sorry

                                                Crab & Halibut Dip

                             2 pounds Lump crab ( Costco carries it )

                             1 sweet onion ( chop and sautee )

                             1 Pound hallibut (optional )

                             2 Pounds cream cheese

                             2 cups chopped artichoce hearts

                             ( use the type in water, if you use marinated in oil

                              Rinse off the oil )

                               2 Tbls minced garlic

                               salt and pepper to taste

                              1/2 cup shredded parmesian cheese for the top

                              1 cup mayonnaise

      Mix everything together except Crab using you hands. You also can add a little lemon juice or other seasonings you like. This recipe can be very versitil. At the end fold in crab gently so not to ruin its lumpy texture. You can put it in a small baking dish or individual ramicans, its up to you. You can mace this 2 or 3 days in advance wich is always nice. Top with parm or your favorite cheese and bake till hot. You can put on crackers or sliced bagett.

                                 Another dip alond this line is Buffalo Chicken Dip. Just google for recipe, its real good.

  10. Shell on prawns are really nice with a dip if you present them nicely on a bed of rocket and sliced lemons.

    Bread sticks with dips,

    Vol au vents are also classy and light.

    Strawberries and Pineapples are also nice, you should ask your sister what she wants since it's her bridal shower.

  12. I love Costco for stuff like this.  You can really stock up on some things & keep a good budget.  Also, it's all about presentation.  Break out your nice china or pick up some beautiful bowls/platters at places like TJMaxx or Marshall's.

    Here are some of my favorite Costco finds:

    Mango Salsa

    Hummus

    Pita Chips or Multi-colored tortilla chips

    Croissants - mini or cut in half to make sandwiches using

    Costco's deli fresh Chicken Salad (the kind they make in the store)

    Shrimp Cocktail (re-plate their tray or boil your own fresh shrimp with lemon slices & whole peppercorns, cocktail sauce = ketchup, horseradish, worstershire & squeeze of lemon)

    Veggie dip to serve in little cups (plastic or teacups) with

    Veggies (Haricot Verts, carrots, radish, celery, etc.)

    Blue Crab Dip

    Toast or Water Crackers

    Cheeses - brie, fresh mozerella, Boursin or Alouette

    Frozen Quiches

    Frozen Spanikopita

    Frozen Chicken Satay

    Fresh Fruit & Fruit Salad (cream cheese, marshmallow fluff, your favorite preserve - blueberry, strawberry or pineapple)

    Frozen Cream Puffs

    Splurge on pretty cupcakes!

  14. Here are a few ideas:

    Pinwheels

    Ing:

        * 1 (8 ounce) package whipped cream cheese

        * 10 (10 inch) flour tortillas

        * 1/2 cup green onions, chopped

        * 1/4 cup black olives, chopped (optional)

        * 3/4 cup chopped ham slices

    Dir:

       1. Spread whipped cream cheese spread evenly on tortillas. Sprinkle the green onions, black olives and chopped ham slices evenly between all ten of the tortillas. Roll tortillas up jellyroll style. Cover with plastic wrap and refrigerate for 2 hours.

       2. Remove from refrigerator and slice at 3/4 inch intervals. Arrange on tray and serve.

    **You can change it up a bit by adding a layer of baby spinach leaves, or changing the lunch meat (turkey, for example)

    ~~Cheese & Pineapple

    Ing:

        * Cheddar cheese, cut into cubes of approximately ½ an inch

        * Pineapple cubes

        * Toothpicks

    Dir:

    First cut the cheddar cheese into cubes and put one cube onto one toothpick. Then take a cube of fresh or canned pineapple and put it next to the cheese on the toothpick. Cheese and pineapple on picks is quick and easy to prepare and the combination of flavors is absolutely delicious.

    ~~Cucumber Sandwiches

    Ing:

        * Thinly sliced bread

        * Cucumber

        * Butter (at room temperature it makes it easier to spread)

        * Salt if liked

    Dir:

    Firstly butter the sliced bread and cut off the crusts. Now peel a cucumber and slice it very thinly and arrange on one slice of the buttered bread and lightly sprinkle with salt if liked. Then top with another slice of buttered bread and cut the sandwich into four neat dainty triangles.

    It's always a good idea to cover sandwiches until they are needed to prevent them from drying out.

    ~~Cheese Straws

    Ing:

        * 8oz all-purpose flour 2 cups

        * 6oz shredded (grated) cheddar cheese

        * 4oz butter (softened)

        * 2 egg yolks

        * Salt and pepper

    Dir:

    In a bowl mix together the all-purpose flour, the salt and pepper and the shredded cheese now rub in the butter and then add the yolks of two eggs and stir everything together. Then knead until smooth.

    Next on a floured board roll out the dough until its about ¼ inch thick. Now cut into fingers about 3 inches long and ½ an inch wide.

    Place the cheese straws onto a baking sheet lined with parchment paper and bake for approximately 20 minutes until golden at 350°F (180°C).

  15. LITE SPINACH-BACON DEVILED EGGS  

    1 dozen eggs, hard cooked and peeled

    1/2 cup frozen chopped spinach, thawed and drained, squeezed dry.

    1/4 cup mayo

    1/4 cup bacon bits

    2 1/2 tbsp cider vinegar

    1 tbsp sugar

    2 tsp black pepper

    1/4 tsp salt

    Cut eggs in half lengthwise, scoop out yolk and mash with a fork. Add remaining ingredients and mix well. Spoon yolk mixture into egg halves. Chill until ready to serve (should chill 2 hours to overnight to let the flavors blend

    SHRIMP AND CRAB COCKTAIL  

    1 can med. to lg. shrimp, cleaned

    1 can crab, cleaned

    1 bottle cocktail sauce

    1 tbsp. lemon juice

    1 tbsp. horseradish

    1 tbsp. Worcestershire sauce

    Mix cocktail sauce, lemon juice, horseradish, and Worcestershire sauce, add shrimp and crab. Refrigerate overnight before serving. Very spicy.

    FRENCH BREAD APPETIZER  

    1 c. shredded Jack cheese

    3 oz. cube cream cheese

    1/3 c. butter

    2 egg whites

    30 1" cubes French bread

    Cook and melt Jack cheese, cream cheese and butter (microwave works great for this). Beat egg whites until stiff peaks form. Fold egg whites into cheese mixture. Dip bread chunks into cheese to coat each piece. Place coated cubes of bread on cookie sheet with wax paper lining, freeze until firm 30-60 minutes. Bake at 400 degrees for about 10 minutes. This recipe takes time to prepare, but is a perfect make ahead dish to pop in oven when guests arrive.

    * Taco Tartlets----Tiny savory tarts with a taco meat crust and a delicious filling made from salsa, sour cream and crushed tortilla chips.

          1 pound lean ground beef

          2 tablespoons taco seasoning mix (make your own)

          2 tablespoons ice water

          1 cup sour cream

          2 tablespoons taco sauce

          2 ounces black olives, chopped

          3/4 cup coarsely crushed tortilla chips

          1 cup shredded cheddar cheese

          Preheat oven to 425 degrees. In medium bowl, mix beef, taco seasoning mix and ice water with hands. Press into bottom and up sides of Mini-Muffin Pan, using Mini-Tart Shaper (I used the back of a melon baller).In a small bowl, mix together the sour cream, taco sauce and olives. Stir in tortilla chips. Place a spoonful of filling into each shell, mounding slightly. Sprinkle cheddar cheese over tops. Bake 7-8 minutes.Remove tartlets from pan with tip of knife. Serve immediately or cool and freeze. To serve frozen tartlets, reheat in a 375° oven 10 to 15 minutes or until hot.Yield: about 30 tartlets.

    This recipe also works using regular muffin pan. Bake for 15 minutes or until done.

  20. here's a delicious sweet recipe: mix together 1 tub cool whip, 1 can sweetened condensed milk, & 1 can lemonade concentrate. spoon the mixture into mini phyllo dough tart shells, top with blueberries, raspberries, & sliced strawberries, & enjoy!

    mini cheesecakes are also a great dessert, and these don't even require baking. mix together 2 8-oz packages cream cheese, 1 14-oz can sweetened condensed milk, 1/4 cup lemon juice, and 1 tsp vanilla. line a few muffin tins with paper cupcake liners and drop an oreo into the bottom of each (this will be the "crust"). pour the cream cheese mixture into the cups and let set in the fridge for at least an hour. top with mini chocolate chips or chocolate shavings if desired, and voila!
