Need some ideas on what to prepare for a wedding?

I am cooking for my step-daughters wedding and I need some ideas on what to prepare. We live in Louisiana and I already have plans to fix shrimp bisque, because the bride and groom have requested it. Any ideas? or even recipes?

  1. There really are no rigid guidelines when it comes to planning a wedding menu, besides having balanced variety to appeal to different tastes. A little bit of everything I say! (And nothing too pungent) You don't want to serve dishes with powerful odors to guests who will be socializing within inches of one another.

Crawfish etouffee or blackened catfish would be wonderful, if you can prepare it easily enough for that many people:  hush puppies or cornbread;  Greens with crumbled bacon;  Fruit ambrosia;  dirty rice ...  Louisiana has the best food anywhere, and I can't imagine "improving" on your local cuisine:)  ....  A tiered white cake, with lemon filling, and coconut on the sides - decorated with yellow & white fresh chysanthemums or daisies (make sure they haven't been sprayed with pesticides) .....  You might want to have some veggie/dip and fruit platters out before dinner; maybe a spinach dip and crackers & cheese

  3. At my cousin's wedding, they had salad with almonds, tiny chunks of blue cheese, and a blue cheese dressing. Best salad I ever ate!!

  4. Mmmm.... Shrimp bisque!  Maybe you could do primarily a seafood theme so that items on your full menu will automatically complement each other.  When I host large dinner parties, I make crab cakes because I can prepare them a day in advance, leave them in the fridge and them pop them into the oven the day of.  Plus, the time spent resting in the fridge allows the flavours to develop!  While crab cakes are more affordable as a starting course, maybe a lobster lasagna would make a nice main.  Again you can assemble it a day ahead, pop it into the oven and you can make the other layers using less expensive ingredients like ricotta cheese and spinach.  Delicious!
