If  you're happy to sort out the flights and the accomodation separately (i.e, not a package holiday) -then try looking on holiday-rentals.com.  they have thousands of private apartments and villas, and you deal directly with the owner.  There are some great properties on there - apartments, villas, townhouses - a variety of different prices too.
