Check with the local authorities, i.e. the police, to find out how to locate the owner of the vessel. It is public information to know the owner of a vessel.

If it is a commercial vessel, you should be able to get the information through public records in the port where you saw her.  If it is a privately owned pleasure craft, you'd need the registration numbers.  I don't know about the UK, but here in the states, that number is generally found on the starboard side near the bow.
