  1. I freeze a lot of sweet peppers when they are in season.  I will freeze some for filled peppers, some in strips for sweet italian sausage sandwiches and pizza and some diced.  I just wash them, clean the seeds out and cut them up as I want.  Then I store them in freezer bags.  

    You can put them up in canning jars also with olive oil, garlic and the like.  The recommendation for the Ball canning book is a good one!  It's almost a bible for the home canner!


  2. you certainly can! can them in olive oil add some garlic or other spices like a sprig of rosemary. I roast mine before preserving them too. makes a great gift as well.

Lots of canning recipes feature diced bell peppers especially anything termed "relish".  I would get the Ball company's canning recipe book available at the address on a box of canning jars.  The one for green tomatoes is especially good.  Also, consider freezing some sliced.  They will keep for several months that way (longer and better if you get most of the air out of the bag first).  You can then break them out for a winter salad or to add to pasta sauce, fajitas, etc.  I don't blanche them, just freeze them fresh to preserve as much "crunch" as posible.

  4. You can roast them in a comon oven untill they blister on all sides..then throw in a paper bag and close it up for 10 minutes..then you take them out and peel the blistered skin off..cut a slit down the side remove the seeds...and then stack them layer over layer in baggies and freeze them..freeze only the amount in the baggies that your normal household will use for 1 meal/snack
