New Years Vacation.....When to book??

I want to book an all-inclusive vacation for my boyfriend and I over New Years. We would like to leave after Christmas (any day after the 25th) for 7-10 days. When is the best time to book for something like this?? Should I be searching and booking now, or wait and get something last minute?? What would get me the better deal??
