i was at a party last year and a new zealander was doing a hangi. i was very intruiged by the whole process.

i want to do one this weekend, but do not have all the nessasary stuff.

my plan is to do a small one. i am going to aquire a shopping basket for the cage and do 2 chickens in it.

i will dig the whole twice the depth of the basket.

i will heat up 6 house bricks for 1 hour with the bonfire, which is in the pit.

i will remove most of the embers.

the chickens will be wrapped in damp cotton bedsheets.

i will then put the basket in. cover with a bigger damp cloth. then bury with soil.

i think it will take 3 hours?

will this work?

what will i stuff the chickens with?

how long shall i heat the bricks for?

  1. A hangi is a maori method of cooking it is intruiging but not many new zealanders other than maori's have a clue about it other than underground cooking. You are much better off searching on the internet for methods because i don't think there are many maori's on thi site.

  2. Here is an article on how to prepare and use a hangi (earth oven) http://www.shelfordfeast.co.uk/hangi.htm...

    good luck!
