Nice and easy vegetarian dinner without tofu needed?

I'm trying going vegetarian, and I need a simple dinner idea. Last night it was vegetarian lasagna. Yesturday, for lunch I had an amazing salad. So, I don't really want salad or lasagna. it can't have tofu because my mom doesn't like tofu. Also, my dad likes meat, so it must be something versitile where we can make a little for him with meat... Thank you

  1. SPEGHETTI!!!!!!!!i love it with out meat and just the chunky sauce but my brothers put some ground beef in theres.


  2. Go with mexican food.  Refried bean burritos or nachos.  Soy crumble tacos.  Spicy rice and beans.  There are tons of options.

  3. Pasta Primavera is always a hit here. Especially when it's serrved with loads of garlic bread. You can always make a few oven roasted meatballs for your Dad to have with his.

  4. If you have a BBQ or Grill, then you can grill up some Portobello mushrooms before (or on the other side of the grill) you dad grills up whatever meat he wants to eat. You can top the mushroom with a little goat cheese or fresh mozzarella. You can also grill up some summer squash marinated in Italian dressing as a side that both you and your dad can enjoy. Finish the meal off with a whole grain (e.g. grilled polenta)  and you have a complete meal for both of you with little effort.

  5. Saying you don't like tofu is like saying you don't like cake flour.  But I do have ideas that don't involve it.

    You could make a veggie pizza; as a vegan, I've learned to like them without cheese, but if you like cheese on your pizza, try to find a rennet-free variety.  There are vegan pepperoni slices and vegan sausage crumbles you can get if your family likes those.

    There's a website called the Vegetarian Loaf Studio; pick your ingredients, and it gives you a recipe.  Serve with some steamed greens and a baked potato (or mashed taters)

    You can make a stir-fry with just veggies or with meal starter strips from either Lightlife or Morningstar Farms.

    Get some veggie burgers and grill them, serve with fries.

    Most of these are all veg, but with analogues so your dad won't miss the meat.

  6. What about vegetarian spaghetti?

    Make the spaghetti sauce with all the usual except meat. Cook meat for your dad but have it seperate. Drizzle the non meat sauce over the noodles and he can spoon some meat into it!

  7. Make vegetarian tacos. you can have tomatoes, avocado, lettuce, black olives, cheese, sour cream, salsa, green and red peppers and your dad can have it with meat. It will be fun and everyone gets what they want.

  8. Quinoa with veges and beans, topped with any kind of spices or sauce.

    Quinoa is a complete protein, your parents will be happy to know about that.
