Nikon flash photography

How do I set exposure for slow-sync flash with my D-80 and SB-600?I know I have to set slow-sync on the camera and i-TTL on the speedlight, but do I leave the camera in P and let it meter itself, or do I go for aperture priority to cntrol depth of field....am confused.Any help gratefully received.Jeff
