Question:

No meat meal.?

At church we're going to have "Vegitairian night." I saw the list and most people are going to bring side dishes like rice and beans and stuff like that. But I want to bring a "main dish" dish. But I don't care for tofu and if I don't have to put soy in it that's a plus.

What main dishes do veggietarians eat? Oh and I'll probably have about 50+ people. But there's going to be a lot of food there already so I'm not worried about that.

  2. Get the FANTASTIC BRAND TACO FILLING it is usually sold at health food stores but alot more regular grocery places carry it. anyway follow the taco bake recipe on the back, it will be a hit!

  4. There are lots of main dishes that vegetarians eat.  

    Any kind of pasta--spaghetti with meatless marinara or alfredo sauce

    Macaroni and cheese

    Meatless pizza

    vegetarian lasagna

    lentil soup/stew

    You could probably find a meatless meatloaf recipe!

    Pretty much anything you eat without the meat.

A couple of these: Hollow out a sourdough loaf of bread and layer with hummus or ricotta, roasted red peppers, grilled slices of eggplant, grilled slices of sweet potato as high as they will go, make the last layer another moist one, like chopped olive tapenade, or pesto, or ??? Then put the "top" on and press with a heavy book or something in the fridge. This can be made up to 24 hours earlier and keeps well. My mom likes it with a pickle on the side.

    The next dish is a little weird sounding, but hearty and tasty; I made it veggie from a meat version by that wonderfully wacky Alton Brown guy on the food network: Chop up cabbage and begin to steam it about 5-8 minutes, then add one diced potato and one diced APPLE, 1 tsp cinnamon, steam some more like 5-8 minutes until the potatoes are tender. Add meat alternative, or my favorite, (if you eat it) salmon "sausage". Add salt and pepper to taste. Sounds weird, but it is great and I probably cook the cabbage too long, but it works. Experiment. Makes a huge dish; for your church you might want to make it twice.

    - Veggie lasagna

    - Vegetarian chili

    For vegetarians, rice and beans isn't necessarily considered a "side dish".  It can be the main course, with some veggies on the side.  Beans are filling and contain protein.

  8. Try a pasta dish like Pasta with Pesto or Fettuccine Alfredo--no need to add meat!

How about eggplant parmesan or eggplant rolletini?  And just use a NON meat marinara sauce.  You can make one that is sooo easy.  just mix crushed tomatoes with some chopped garlic and fresh basil.  Just add garlic and basil and other seasonings to taste.  Simmer on low for a few hours.  If too tart, add a tsp. of sugar at a time until you get desired sweetness.  If you use fresh basil, you most likely will not have to sweeten the tomatoes.

    If you are not sure what eggplant rolletini is....

    (I also use mozzarella cheese...)

    EGGPLANT ROLLETINI

    1-2 med. size eggplant(s)

    Sliced Mozzarella

    1/2 tsp. Ricotta

    Parmesan cheese

    pepper

    Prepared tomato sauce

    Peel and slice eggplant lengthwise. Soak slices in salted water. Drain thoroughly. Lay out eggplant and sprinkle each slice with pepper and Parmesan cheese. Top each slice with small amounts of Ricotta and place slice of Mozzarella over ricotta smoothing it down. Roll each slice and place seams downward in slightly sauce covered bakeware. Sprinkle with Parmesan cheese and tomato sauce. Cook in preheated 350 degree oven for 20 minutes. Set for 10 minutes.

  10. You could make a pasta dish.  Amy's makes good marinara sauces, and all of her products are vegetarian (many are vegan).

    You could make veggie loaves--check out The Vegetarian Loaf Studio--you pick the ingredients you want, and it provides a recipe.

    There's a mushroom pot pie recipe in Sarah Kramer's "La Dolce Vegan" that is spectacular.  I vary the recipe in that I double the dough and use it as a base rather than put it over the top of the mushrooms as the recipe calls for it.  And I use sweet potatoes instead of plain (but Yukon Golds might work).  Or you could try to make a casserole with all sorts of veggies.  I'd suggest some veggie chunks that many companies put out, but most have soy in them.
