  1. The many dishes listed by someone previously are traditional Norwegian dishes, but they are rarely eaten anymore. Only for special holidays or traditions. I lived in Norway for a year and the only one of those I ate was the cauliflower soup, which was very delicious.

    Food that is very common is smoked salmon with scrambled eggs, risgrøt(which is like a rice porridge), meatballs in brown gravy, pancakes(which are much flatter and a have a different taste than American pancakes), boiled potatos, and all kinds of breads with different meats, cheeses, and spreads on them.

I have attended the Christmas buffet at the Norwegian-American Chamber of Commerce, which has a selection of the following traditional foods:  pickled herring, pickled beets pickled cucumbers, rye bread, boiled potatoes, cured salmon, roast beef, liver pate, meatballs in creamy gravy, pastries with creamy filling and lingonberries/cloudberries, butter cookies with cardamom spice, and fatigman (deep-fried crunchy cookies dusted with powdered sugar).   While they were not served, lefse (potato & flour pancake) and lutefisk (unimaginably treated cod) are also traditional foods.  My father used to enjoy rye flatbread and gjedost, an aged goat cheese that has kind of a caramel flavor.
