Nut free alternatives to almond paste/marzipan

Does anyone know of any nut-free alternatives to almond paste/marzipan as my boyfriend has a nut allergy and I'd like for him to enjoy our wedding cake.

    I know from asda you can but nut free peanut butter aswell if that would be any good!

  2. Apart from the lovely taste, marzipan give the cake a good smooth base for the fondant icing (sugarpaste). But it is not really necessary. Fondant icing can be used alone.

    Use apricot jam only if you are using fruit cake as a base. Add a little bit of water to the apricot jam and boil the jam and water for a few minutes. Apply very sparingly to the wedding cake. You only need enough on the cake to give it a tacky surface for the fondant to adhere to. Roll out a thickish layer of fondant icing. The thick layer will compensate for the marzipan. Using a thin layer will show up the dark fruit cake colour and also the lumps and bumps of the cake.

    If you are using sponge cake recipe for the cake, use butter icing instead of apricot jam. Again apply sparingly.

    If you are worried about the fruit bleeding into the icing, I think I would use an extra layer of fondant in place of the marzipan. Use as you would use marzipan (or almond icing, much nicer!) and let it dry out a bit longer than usual (say, longer than a week) before icing with the final coat of fondant. This will give your cake a firm surface to work on later when decorating. Personally, I don't use apricot jam. I use either a sugar syrup or just lightly beaten egg white. Incidently, I think you would only have the 'bleeding' problem if the cake was to be stored for a period of time before the wedding.

    If you are not baking the cake yourself pass this on to the baker.
