Nutrients In Cooked Vegetables?

What's the best way to cook them with minimum loss in nutrients? What are examples of vegetables that are better eaten raw and others that are better when eaten cooked. What about Onions? do they still keep their nutrients after you cook them?

  1. the more you cook vegetables, the more they lose their nutrients.  eat as much as you can raw or steam for a very few minutes to soften them a bit.  think of the ones that go into a salad.  they're best raw, but most can be eaten raw.  


  2. Cooking any vegetable does result in a loss of some nutrients. Steaming loses very few - boiling will lose the most. So, almost all will provide more nutrients if eaten raw. I can't imagine eating a raw potato, though. Ick!

    any vegetable and fruit can be consumed raw.

    trust me there's more than enough vitamins and minerals in all vegetables and fruits to keep you going daily.

  4. Yes, steaming is good, but so is blanching/shocking (http://allrecipes.com/HowTo/Blanching-an... or a quick stir fry also is a good method for retaining the crunchiness and nutrient value of veggies.

  5. Where I live the onions are mild and great in a salad. The tomatoes are large and sweet. We steam our vegetables so we lose very little, but I love almost all vegetables raw. Potatoes you have to be careful. They aren't good to eat much raw potato.

  6. the best way to eat vegis, besides raw, to keep the most nutrients, is to steam them.  steaming them until they are just a little less crisp, is the best bet.

    And nutrients are not added, they are natural in all vegetables and fruits.
