Rian Air flys from Frankfurt Hahn, though it is closer to Koblenz then it is to Frankfurt. German wings flies from Cologne to Dublin. Try www.travelocity.de as they have some good options as well.

The advantage of Cologne is you can take a train so if you are suffering from a hangover on your return trip you only have to get on a train and go back to sleep, with luck it will be a direct train back to Nuernberg or a transfer at Frankfurt. About a 4 hour train and 2.5 hour flight.
