  2. The "stones" are called otoliths (which I believe is Latin for "ear stones"). They're used for balancing and position sensing. All fish have them, the white seabass just has relatively large ones. I've got some close to an inch long from 40-pound class seabass.

    ADD: According to another source (second link below) otoliths are used for hearing -- white seabass and other croakers use sound underwater (it's why they're called croakers), so these large ear stones help them not only hear, but to also detect where sounds are coming from.

    Anyway, scientists worry about the otoliths because they grow in layers, so if you cut them open they have rings (like tree rings) which can tell the fish's age. (You'll need a microscope to see or count the rings, though.)
